This healthy, easy, fresh dish shows off the simplicity of good quality fresh ingredients that are the stars of Italian cooking. It's a great way to use all the good summer produce available, and there's no cooking required apart from the pasta!
1 large zucchini or 2 small zucchinis diced
1 pound of ripe tomatoes, diced
1 cup of Arugula
1 teaspoon parsley, chopped
A handful of fresh basil, thinly sliced
6 cloves garlic, minced
1/4 cup extra virgin olive oil
1/2 cup Shredded Parmesan
1 pound bow tie pasta
Freshly ground salt and pepper
In a large pot of salted boiling water cook pasta until al dente, about 11 minutes.
Meanwhile gently toss all other ingredients in a large bowl.Toss hot drained pasta directly in, taste for seasonings and serve immediately with extra Parmesan for the table. Buon appetito!
