We all need a little jolt of extra nutrition and nourishment, especially when we have fun, indulgent holidays. Here's a really simple, yummy way to throw together something healthy and easy yet layered and full of fresh flavor.
Take any cooked grain- quinoa, leftover brown rice, barley, grits, millet, farro- anything works. Then grab some greens, a few good handfuls of Kale or Mustard Greens, Chard, or Collards. Sautée the greens for 3-5 minutes in a pan containing one and a half cup or so of water with a chopped garlic clove, 3 tablespoons olive oil, juice from a half of a lemon and salt & pepper. I put a little diced chili pepper, some fresh basil & mint, and scallions because it's what I had on hand. Of course that's all optional. Pick a protein next: my favorite are beans, but you can do shredded chicken, beef, tofu, egg- it's all so good. For this particular bowl I made a basic sauce from soy sauce, chili sesame oil, rice vinegar and ginger and I lightly tossed the whole bowl with the lovely sauce. You can put whatever you like on top: a vinaigrette, hot sauce, pesto, use what you like best along with your own imagination. Enjoy! Cheers to your health!
